Tuna Salad Bowls

1 can of tuna = 1 bowl of yum.

 2 quick recipes that are prefect for lunch.

  • TUNA BOWL #1
  • 1 can tuna
  • ½ cucumber chopped
  • 1 tablespoon fresh parsley chopped
  • ½ avocado sliced
  • ½ red bell pepper chopped
  • Salt & Pepper
  • Drizzle of Olive Oil
  • ¼ lemon juice
  • 4 cherry tomatoes chopped
  • 2 tablespoons for chopped white onion
  • TUNA BOWL #2
  • 1 can tuna
  • ½ cucumber chopped
  • 1 tablespoon fresh cilantro chopped
  • 3 radishes chopped
  • Salt & Pepper
  • Drizzle of Olive Oil
  • ¼ lime juice
  • 2 tablespoons for chopped red onion

Truffle Almonds

Truffle Almonds I heart U!  These make a great housewarming gift in a mason jar.

Regular (skinned) almonds work too.  You can purchase BLACK truffle oil (not white) and truffle salt at TJ Max, Amazon or Williams Sonoma.  Enjoy!



Our house was a spec home and was 95% complete when were purchased it two years ago. I didn’t get to have any input on the finishings!!!  I disliked the cabinet color so much I knew this was one project I couldn’t wait to do.


Today: 100% DIY




What we did:

Removed upper cabinets

Painted cabinets white

Added subway tile

Added wood planks

New cabinet hardware

New black shelving

New window light (was dinning table light)

Added a range hood (microwave now housed in panty)

We completed the kitchen over a year ago and I wouldn’t change a thing! I love white.


Favorite Fall Salad

Light, clean and flavorful, this Fall Salad is my latest obsession!

Helpful tips… as I do not measure anything for this salad. 1. romaine or arugula as base 2. about 1/4 cup loose packed and chopped cilantro 3. julienne/strips with the apple (makes it look pretty) 4. 10-12 pecan cut in half  5. small hand grab of cranberries (official measurement technique) 6. 1/2-whole lemon juiced, depends on size of salad 7. 1-2 tablespoons of olive oil  8. Salt and fresh group pepper to taste.

Banana Oatmeal Muffins


This was my first time making these muffins. The kids give them 2 thumbs up.  They are a great muffins for breakfast or a after school snack.  NO FLOUR!

Banana Oatmeal Muffins

Great on the go breakfast or after school snack for your kids.
  • 2½ cups old-fashioned oats
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 3 tab of chia seeds
  • 2 ripe bananas
  • 2 large eggs
  • ½ cup vanilla Greek yogurt (one small container)
  • 1 tsp vanilla extract
  • ¼ cup honey
  • ½ walnuts
  • optional: ½ cup 60-70% dark chocolate chips
  1. Preheat oven to 400ºF.
  2. In a food processor, add oats and pulse until a smooth, flour-like consistency is formed.
  3. Add to a medium mixing bowl along with baking powder, baking soda, cinnamon, chi seeds and walnuts.
  4. In a large mixing bowl, mash the two bananas until no large chunks remain. Whisk in eggs, yogurt, vanilla extract, and honey. Stir until well-combined.
  5. Add the dry ingredients to the wet ingredients and stir with a wooden spoon or spatula until a thick batter in formed.
  6. Add any optional fillers: coconut, chocolate chips...
  7. Spoon batter into a greased muffin tin, filling each section about ¾ of the way.
  8. Bake for 12-15 minutes, or until an inserted toothpick comes out clean. Let cool slightly before eating.

IMG_5581  Chia Seed is a great source of protein to add to baked goods and smoothies. I buy my chia seed at Costco.

Mint Ginger Lemonade


Another great find on my trip to Vancouver that I needed to recreate.  I found this delicious lemonade at “Moms Grilled Cheese Truck”




Mint Ginger Lemonade
Prep time:

Serves: 4
  • ½ cup mint leaves
  • ¼ cup chopped fresh ginger
  • ⅓ cup honey
  • 2 cups boiling water
  • ½ cup fresh lemon juice
  • 2 cup cold water
  • Garnish:
  • Ice cubes
  • Fresh mint
  • lemon slices
  1. Boil 2 cup water on stove or microwave
  2. Combine mint, ginger and honey in a bowl, pour boiling water over and let steep for 30 minutes.
  3. Strain into serving pitcher and add lemon juice and cold water.
  4. To serve:
  5. Fill glass with ice. Add lemonade and garnish with mint and lemon slices.
